Melting in the summer heat? Don’t worry, I got you. This watermelon sorbet is the most refreshing, delicious, and healthy dessert for the summer and is made with only three ingredients.

Let’s face it; we are all feeling the sun literally descend upon us this summer. It literally feels like the sun is sucking all our hydration and energy with a straw, and apparently, this isn’t peak summer yet. God help us all.

The only thing that I want to eat during this weather is watermelons. Cold, watery, crunchy, refreshing – they’re the PERFECT summer fruit. But you know what’s better than watermelons? Frozen watermelons.

This watermelon sorbet is made with three simple ingredients – frozen watermelon, lime juice and zest, and honey, and makes for the perfect mid-day healthy refresher. I love how simple it is to make + it can be stored in the freezer for the entire summer!

I like using it while it’s a little soft, like a soft serve, and serving it filled in a fresh watermelon slice, the Dominique Ansel-style. The fresh watermelon makes this dessert even more refreshing.

However, you can freeze it in a bowl or popsicle mold, and it will be just as delicious!

How To Make The Watermelon Sorbet

As I said, this is the easiest dessert to make. You only need three ingredients – frozen watermelons, honey, and limes. Make sure to cut the watermelons into small pieces before freezing so that they are easier to blend.

Remove as many seeds from the watermelon as you can, but don’t worry if there are a few remaining.

How to make the sorbet.

  • In a blender, add the frozen watermelon, honey, lime zest, and lime juice and blend on high speed until completely smooth. You will have to move things around with a spoon as they might get stuck a few times. However, be patient and don’t add any water, or the sorbet will become icy.
  • Cut a thick triangle watermelon slice, then remove the center from it.
  • Transfer the sorbet into a piping bag with no tip and cut a big hole at the end, then pipe the sorbet into the watermelon slice. Top with some salt and lime zest, and enjoy. PS: it’s going to get messy, but it’s totally worth it!
  • Alternatively, let the sorbet set in a bowl or popsicle molds.

Also, you can basically do this with any fruit and make a delicious homemade sorbet, like this mango sorbet!

Equipment

  • Blender
  • Piping bag/ziplock bag optional

Ingredients
  

  • 500 grams frozen watermelon cubes (seeds removed)
  • 1 lime's zest
  • 1/2 lime's juice
  • 1 tsp honey optional
  • Salt

Instructions
 

  • Add the frozen watermelon, lime zest, lime juice, and honey into a blender and blend on high speed until it's silky smooth. If the pieces get stuck, shake the blender and move them around with a spoon to get the blender going again. You might have to do this a few times throughout the process.
    500 grams frozen watermelon cubes, 1 lime's zest, 1/2 lime's juice, 1 tsp honey
  • Cut a thick triangle watermelon slice and remove its center. Transfer the soft sorbet into a piping or ziplock bag and pipe it into the hollow center of the watermelon slice. Top with a sprinkle of salt and lime zest and enjoy.

  • Alternatively, you can set the sorbet in a bowl or popsicle mold and enjoy it whenever you want to.

Notes

Storage:
This watermelon sorbet can be stored in the freezer for up to two months.
Tips & Tricks:
  • Cut the watermelon in small cubes before freezing to make the blending process easier.
  • Deseed the watermelon as much as you can, but don’t worry if there are a few seeds left.
  • The blending process might take some time. Make sure to keep moving the ingredients with a spoon every time they get stuck (with the blender switched off). Don’t add any water, as this will make the sorbet icy and diluted.
