For people reading this anytime in the future, I want you to picture this.

It’s 20th July 2023. The “Barbie” movie has just been released, and the entire world around me is pink. Literally, everywhere I look, there is pink. I just Googled “Barbie” movie and my screen turned pink with pink sparkles; I am not exaggerating.

So, of course, I have been influenced to make a pink dessert. After all, I am a girlie girl at heart. 💖

When I thought of making a pink dessert, I knew it had to be a Rooh Afza-flavored dessert. I mean, how could it not? Rooh Afza gives desserts the perfect Barbie pink color, and it’s sort of my signature, so of course, I had to do it.

Now, it’s 50 degrees Celsius outside, and the last thing ANYONE wants to do is turn on the oven, which is why this simple, 3-ingredient Rooh Afza ice cream is the perfect recipe to celebrate the pink era.

And honestly, dessert could not get simpler than this. Even a child could whip up this dessert; I am not kidding!

All you need is three ingredients – Whipped cream, condensed milk, and Roohafza. Here’s how you can make the Rooh Afza ice cream.

  • Whip the liquid whipping cream to almost stiff peaks (almost because we will whip it further when we add the remaining ingredients).
  • Add the condensed milk and Rooh Afza and mix again for 2 minutes until fully combined.
  • Fold in some pistachios if you’d like, swirl in some Rooh Afza syrup on top, then let the ice cream set in the freezer overnight.

And that is literally it. Told you it was child’s play!

I have only one piece of advice – do not add more Rooh Afza than mentioned in the recipe, as it affects the texture of the ice cream and makes it super sweet.

3-Ingredient Rooh Afza Ice Cream

The perfect no-bake summer dessert to give you that much-needed refreshment. Made with only 3-ingredients, this Rooh Afza ice cream is fit for the Desi Barbie!

Equipment

  • Electric mixer with whisk attachment

Ingredients
  

  • 200 ml liquid whipping cream
  • 160 ml condensed milk
  • 25 ml Rooh Afza
  • Chopped pistachios (optional)

Instructions
 

  • In a bowl, whip the liquid whipping cream until they almost reach stiff peaks. Don’t overmix at this step.
    200 ml liquid whipping cream
  • Add the condensed milk and Rooh Afza in the bowl and mix for 2-3 minutes until fully combined.
    160 ml condensed milk, 25 ml Rooh Afza
  • Mix in the chopped pistachios (if using), then transfer the ice cream mix in the serving bowl.
    Chopped pistachios (optional)
  • Swirl in a few drops of the Rooh Afza syrup on top and let it set in the freezer overnight.

Storage:
This ice cream can be stored in the freezer in a closed container for up to 10 days.
