Valentine’s day is just around the corner, and I’ve got the best dessert idea for you! This simple and quick 4-ingredient ruby chocolate mousse is the definition of romantic. The perfectly pink mousse tastes as delicious as it looks and can be whipped up in 20 minutes so that you can spend more time with your Valentine instead of slugging in the kitchen. PS: this is a no cooking/no baking/no eggs recipe! It cannot get easier than this!

Valentine’s day is one of those holidays where things must be pretty. I mean, you can’t be serving ugly desserts to your special someone on this special day. Because guess what? We eat with our eyes first.

But it can’t JUST be pretty; it has to be equally (or even more) delicious than it looks. Cause at the end of the day, it’s the taste that counts. Funnily enough, most people think that if a dessert is pretty AND delicious, it will be very hard to make.

Well, my friends, I am here to change my mind because this Valentine’s Day Ruby Chocolate Mousse is one of the easiest and prettiest desserts you can make for your loved one.

It uses 5 ingredients – ruby chocolate, milk, whipping cream, and gelatine requires no baking or cooking and comes together in 20 minutes. No, I’m not kidding! So if you’re no baking expert and scared to make something for your partner, this recipe is perfect because it is so low effort.

What is Ruby Chocolate?

First things first, before anyone asks, “what’s ruby chocolate?”. Ruby chocolate is a new type of chocolate that was discovered just a couple of years ago. It’s a natural chocolate like milk or dark chocolate, but here’s what makes it interesting: Ruby chocolate is naturally pink in color and has a slight tart, berry-like flavor.

The overall flavor profile of Ruby chocolate is similar to white chocolate, but it has a tart flavor that kicks in at the end, making this chocolate unique. But honestly, it’s the color that completely blows you away. Ruby chocolate has the prettiest pink color that makes any dessert ultra pretty.

I’ve had a packet of ruby chocolate lying around for about a year, and I thought, “hey, it’s valentine’s day; what better time to make a pink dessert?”.

Do I have to use Ruby chocolate to make this mousse? Ruby chocolate can be easily found at any professional chocolate store and behaves the same way as white chocolate does. So you’re good! But if you cannot find it, you can also make this mousse with white chocolate. If you want to make it pink, add some gel or liquid coloring to your whipping cream before whipping it!

Using Gelatine For The Mousse

This mousse recipe uses gelatin for setting, and a lot of people ask me if they can skip it. The answer, sadly, is no. Even if you are setting the mousse in a glass, the gelatin is necessary to give it that bubbly, rich texture that a mousse is known for.

Nowadays, you can easily find vegan, clear gelatin in most grocery stores; if you are looking for a halal version, that will work, too!

How to bloom the gelatin: Gelatin powder has to be activated before use. To activate it, mix the powder with ice-cold water and set it in the fridge for 15-20 minutes before use. For every gram of gelatin, add 5 ml of ice-cold water.

Make sure you add the gelatin mixture to the chocolate mixture while it’s still warm, or the gelatin will not mix into the mousse properly and remain grainy.

I have decorated this mousse with whipped cream, ruby chocolate hearts, and gold foil, but you can decorate it however you like! You can also pair it with berries or jams to take it to the next level.

PS: I always measure ingredients in grams, never in cups. Using a measuring scale is the only way to bake accurately. Cups are unreliable and can give different measurements, so I suggest you buy a measuring scale before you start baking! If you can’t get your hands on one, you can use the online tools for converting grams into cups; however, I do not guarantee their accuracy.

4-Ingredient Ruby Chocolate Mousse | Easy Valentine’s Day Recipe

This delicious and beautiful pink chocolate mousse is the most simple and quick solution to your Valentine's Day dessert!

Equipment

  • 2 glasses or bowls to set the mousse
  • Hand whisk
  • Silicone spatula

Ingredients
  

  • 100 gs ruby chocolate can be substituted for white chocolate
  • 35 ml full-fat milk
  • 35 ml liquid whipping cream
  • 3 gs gelatin
  • 15 ml ice-cold water (to activate gelatin)
  • 112 ml liquid whipping cream with pink color (color optional)

Instructions
 

  • Bloom the gelatin: In a bowl, add the ice-cold water, then sprinkle the gelatin powder over it and immediately mix it in until combined. Let the mixture chill in the fridge for 15 minutes until completely set.
  • Place the chocolate in a heat-proof bowl. Combine the milk and liquid whipping cream and heat it in the microwave or a saucepan. Pour the hot cream mixture over the chocolate, let it sit for a minute allowing the chocolate to melt from the heat, then whisk the mixture until the chocolate is completely combined with the cream.
  • While the mixture is still hot, add the bloomed gelatin and whisk it in until it's completely melted and mixed into the chocolate milk. Set the mix aside until it comes down to room temperature.
  • Whip the liquid whipping cream until you reach medium-stiff peaks. You can add the pink coloring at this step if you are using it. Then, gradually pour the chocolate mix into the cream while slowly folding it in with a silicone spatula. Make sure that you are not rushing this process. The folding process has to be done slowly to ensure that the airiness of the mousse is maintained as much as possible.
  • Pour the mousse into cups or a serving dish, then set it in the fridge for 2 hours. Once ready, top it with whipped cream, extra ruby chocolate, and any decorations you like!

Notes

Storage:
This mousse can be made a night in advanced and stored (covered) in the refrigerator for up to 2 days.
Tips & Tricks:
  • Use ice-cold water to activate the gelatin, as it will not bloom if it is not cold enough.
  • Add the bloomed gelatin into the chocolate and cream mixture while it’s still hot, or it will not mix correctly and will remain grainy, giving the mousse a grainy texture.
  • Be gentle while folding the chocolate mixture into the whipped cream, you want to retain the airiness of the whipped cream to make sure that the mousse is airy and fluffy.
