I think everyone has a love-hate relationship with mug cakes. On one hand, a cake ready in 10 minutes without an oven? COUNT ME IN. On the other hand, almost every mug cake recipe results in the most disappointing, dry, chocolate thing that has no business calling itself cake. I know, I’ve tried plenty.

The continuously failed recipes really made me think if a good mug cake is nothing but a fantasy, but after many, many tries driven by my sudden chocolate cravings, I finally found a recipe that works, and it works like MAGIC.

It’s simple, eggless, and when I say it can be made in under 10 minutes, I actually mean it.

So let’s get into the recipe.

Chocolate Mug Cake Recipe

The main things to keep in mind before making this cake – use a really big mug, because the batter rises quite a lot, which makes the cake light and moist. I also recommend cooking it just for 60 seconds. I find that this results in the perfect moist texture. Any more and it can start becoming dry.

I also like to change it up a bit at times and fill it with caramel sauce in the center before cooking, which makes it even more delicious with a goey caramel center. You can choose to do it with or without!

Here are the steps for making the eggless chocolate mug cake.

  • In a large mug, add the milk, mix it with a little vinegar, and let it sit for one minute. This creates a buttermilk substitute that makes the cake extra moist.
  • Add the dry ingredients – flour, cocoa powder, baking powder, baking soda, coffee powder, and salt- and give them a quick mix.
  • Add both the brown and white sugar and mix again. If you don’t have brown sugar, you can substitute it with more white sugar. I like using brown sugar as it adds an extra depth of flavor.
  • Add the oil and vanilla and mix well until well combined, and you have a thick cake batter. Then, add chocolate chips or chopped chocolate and give it a final mix.
  • If using caramel, add a spoonful in the center and cover it with the batter.
  • Clean the sides of the mug well so that the batter does not burn on the edges, then microwave it on high for 60 seconds.
  • Top the hot cake with ice cream and any toppings of your choice, and enjoy immediately.

  • Use a large mug: The batter rises significantly as it cooks, so choose a generously sized mug to prevent overflow and maintain the cake’s soft and airy texture.
  • Stick to the 60-second cook time: Microwaving for longer can cause the cake to dry out quickly. One minute is the sweet spot for a moist, fluffy texture.
  • Create instant buttermilk: Mixing milk with a little vinegar and letting it rest for a minute gives you a quick buttermilk substitute that helps the cake stay tender.
  • Brown sugar adds depth: While white sugar works fine, a bit of brown sugar gives the cake a richer, more caramel-like flavor. If you’re out of it, just use all white sugar.
  • Add-ins make it better: Chocolate chips, chopped chocolate, or even a spoonful of caramel in the center take this simple mug cake to the next level.
  • Wipe the sides of the mug: Cleaning the inner walls before microwaving helps prevent burnt bits and keeps the cake evenly cooked.

Ingredients
  

  • 30 ml milk
  • 1/2 tsp vinegar optional for making buttermilk substitute
  • 30 grams all-purpose flour
  • 10 grams cocoa powder
  • 1/4th baking powder
  • 1/8th tsp baking soda
  • 1/4th tsp coffee
  • 25 grams white granulated sugar
  • 25 grams brown sugar or more white sugar
  • 1/4th tsp salt
  • 20 ml oil
  • 1/2 tsp vanilla essence
  • 10 grams chocolate chips/chopped chocolate
  • 1 tsp caramel sauce optional

Instructions
 

  • Place the milk in the mug mix with vinegar, and let it rest for about a minute. This quick step creates a homemade buttermilk that keeps the mug cake tender and soft.
  • Add the dry ingredients-flour, cocoa powder, baking powder, baking soda, instant coffee, and salt and mix together.
  • Add the white and brown sugar, oil, and vanilla, and mix until the mixture turns into a smooth, thick batter. Mix in the chocolate chips or chopped chocolate.
  • If you want a caramel center, spoon a little into the middle of the batter and gently cover it up.
  • Wipe down the inside of the mug so nothing burns along the edges, then microwave on high for about 1 minute. Serve your warm mug cake with a scoop of ice cream and your favorite toppings, and enjoy immediately.
